Abstract

Pasja ruža je jedna od najraširenijih samoniklih vrsta roda Rosa u Republici Hrvatskoj. Njena bogata nutritivna, prehrambena i ljekovita vrijednost te relativna lakoća uzgoja čine ju biljnom vrstom velikog potencijala za uzgoj u Hrvatskoj.
Glavni cilj ovog diplomskog rada bio je utvrditi razlike u kemijskom sastavu i sadržaju bioaktivnih komponenata između plodova samoniklih genotipova pasje ruže, plodova uzgojenih na konvencionalni te ekološki način. More provedene su kemijske analize suhe tvari (%), topljive suhe tvari (%), ukupnih kiselina (%), pH-vrijednosti, vitamina C (mg/100 g svježe tvari), ukupnih fenola (mg GAE/100 g svježe tvari), ukupnih antocijana (mg/kg), β-karotena (μg/100 g svježe tvari) te antioksidacijski kapacitet (μmol TE/L). Utvrđene su razlike u količini vitamina C i to u rasponu od 79,26 mg/100 g svježe tvari u plodovima samoniklih genotipova pasje ruže do 341,92 mg/100 g svježe tvari u plodovima iz konvencionalnog uzgoja. Razlike u koncentraciji ukupnih fenola bile su od 1109,62 mg GAE/100 g kod plodova iz konvencionalnog uzgoja do 1310,79 mg GAE/100 g kod ekološki uzgojenih plodova. Količina β-karotena bila je u rasponu od 13 663 μg/100 g svježe tvari kod ekoloških plodova do 29 500 μg/100 g kod plodova samoniklih genotipova pasje ruže. Vrijednosti za antioksidacijski kapacitet iznosile su od 2263,68 μmol TE/L (plodovi iz konvencionalnog uzgoja) do 2276,57 μmol TE/L (plodovi iz ekološkog uzgoja).
Temeljem dobivenih rezultata može se zaključiti da je plod pasje ruže vrijedan izvor bioaktivnih komponenata te da kakvoća, odnosno nutritivni sastav ploda značajno ovise i o načinu uzgoja. Less

Abstract (english)

Rosehip is one of the widest spread species of gender Rosa in the Republic of Croatia. Its rich nutritional and medicinal value and relative easy cultivation make it a plant species of great potential for cultivation in Croatia.
The main aim of this graduate thesis was to determine the differences in the chemical composition and bioactive compounds content between wildgrown rosehip fruits, from conventional and organic cultivation. More nutritional composition, was conducted: dry matter content (%), soluble dry matter content (%), total acidity content (%), pH- value, vitamin C content (mg/100 g fresh weight), total phenols content (mgGAE/100 g), total anthocyanins content (mg/L), β-carotene content (μg/100 g fresh weight), and antioxidant capacity (μmolTE/L). Vitamin C content ranged from 79,26 mg/100 g fresh weight (wildgrown fruit) to 341,92 mg/100 g fresh weight (fruit from conventional farming). Total phenols content ranged from 1109,62 mg GAE/100 g (fruit from conventional farming) to 1310,79 mg GAE/100 g (fruit from organic farming). β-caroten content ranged from 13 663 μg/100 g fresh weight (fruit from organic farming) to 29 500 μg/100 g fresh weight (wildegrown fruit). Following the determined high content of bioactive compounds in analyzed rosehip samples, a high antioxidative capacity was also determined, ranging from 2263,68 μmol TE/L (fruit from conventional farming) to 2276,57 μmol TE/L (fruit from organic farming).
Based on the obtained results it can be concluded that the rosehip fruit are valuable source of bioactive compounds and that the fruit quality ( nutritional composition of fruit) significantly depends on the cultvation method. Less
