Abstract

Cilj ovog diplomskog rada je usporediti standardiziranu (EZ_S) i modificiranu EZ-DripLoss metodu (EZ_M) određivanja sposobnosti zadržavanja vode (SZV) u pilećem mesu. U istraživanju je korišteno 40 pilećih prsa izuzetih od tovnih pilića linije Ross 308 u dobi od 35 dana. U EZ_S metodi uzorci nisu bili vagani prilikom izuzimanja te se za izračun koristila masa praznog spremnika, masa spremnika sa mesom i mesnim sokom te masa spremnika sa mesnim sokom. U EZ_M su uzorci bili vagani nakon izuzimanja te se za izračun koristila njihova početna i završna masa. Potvrđena je jaka pozitivna korelacija SZV pilećeg mesa utvrđena EZ_S i EZ_M nakon 24, 48 i 72 sata. Vrijednosti utvrđene EZ_M nakon 24, 48 i 72 sata veće su negoli iste utvrđene EZ_S. Pri usporedbi rezultata istraživanja potrebno je uzeti u obzir korištenu metodu utvrđivanja SZV na pilećem mesu, statističku obradu i prikaz dobivenih rezultata.

Abstract (english)

The aim of this stud was to compare standard (EZ_s) and modified EZ-DripLoss method (EZ_M) in chicken meat. The study was conducted on meat samples originating from 40 chicken broilers from the line Ross 308. The EZ_s samples were not weighted after collecting and the calculation was done by using the weight of empty container, weight of container with meat and meat juice, and the weight of container with meat juice. The EZ_M samples were weighted after collecting and the calculation was done using the weight of the samples at the beginning and end. The results showed a strong positive correlation in water-holding capacity using EZ_s and EZ_M after 24, 48 and 72 hours. Results of EZ_M after 24, 48 and 72 hours were higher than the ones using the EZ_s. When comparing the results of the research, it is necessary to take into account the method used to determine the water-holding capacity of chicken meat, statistical analysis and presentation of the obtained results.
