Abstract | Cvjetača (Brassica oleracea var. botrytis) je povrće bogato mineralima, osobito kalijem. Kalij je vrlo važan biogeni element u ishrani ljudi, a čovjekova dnevna potreba za njim iznosi 2000 mg za odraslog čovjeka. Cilj ovog rada bio je istražiti količinu kalija u cvjetači ponuđenoj kupcima i potrošačima na tržištu grada Zagreba. Uzorci su prikupljeni u tri trgovačka lanca, tri tržnice i tri trgovine ekološkim proizvodima u triplikatu. Nakon pripreme uzoraka, sušenja, homogeniziranja i razgradnje u mikrovalnoj peći pomoću HNO3 i HClO4, kalij je određen plamenfotometrijski. Suha tvar uzoraka cvjetače varira između 6,20-7,93% (7,00 u trgovačkim lancima, 6,73 na tržnicama i 6,70 % u trgovinama ekološkim proizvodima). Utvrđene količine kalija u suhoj tvari kreću se od 3,94 do 5,37 % K ST (4,26 u trgovačkim lancima, 4,33 na tržnicama i 4,98 % K ST u trgovinama ekološkim proizvodima). Količine kalija u svježoj tvari kreću se od 496,85 do 880,41 mg K/100 g svježe tvari (620,35 u trgovačkim lancima, 656,83 na tržnicama i 753,16 mg K/100 g svježe tvari u trgovinama ekološkim proizvodima). Unosom 100 g ispitivanih cvjetača može se podmiriti 24,8-44,1 % dnevnih potreba za kalijem. |
Abstract (english) | Cauliflower (Brassica oleracea var. botrytis) is a vegetable rich in minerals, especially potassium. Potassium has a high importance as a biogenic element in a human nutrition and a daily potassium need is 2000 mg for an adult. The aim of this study was to investigate the potassium content in offered cauliflower to customers and consumers in the markets of the city of Zagreb. Samples were collected in triplicate in three retail chains, three markets and three stores of organic products. After sample preparation, drying, homogenization and digestion in a microwave oven using HNO3 and HClO4, potassium was determined by flame photometry. The dry matter of cauliflower samples varies between 6.20-7.93 % (7.00 in retail chains, 6.73 in markets and 6.70 % in organic products stores). The determined content of potassium in dry matter ranged from 3.94 to 5.37 % K DW (4.26 in retail chains, 4.33 in markets and 4.98% K DW in organic products stores). Potassium levels in fresh matter ranged from 496.85 to 880.41 mg K/100 g in fresh weight (620.35 in retail chains, 656.83 in markets and 753.16 mg K/100 g in fresh weight in organic products stores). By intake of 100 g of investigated cauliflowers human can meet 24.8-44.1% of a recommended daily potassium needs. |
