Abstract

Alternativni sustavi držanja postaju sve više prihvaćeni u svijetu zbog pozitivne
korelacije kvalitete proizvoda i dobrobiti životinja. Takvim sustavima su najbolje prilagođeni
sporije rastući hibridi, kao i kombinirane pasmine peradi kao što je kokoš hrvatica. Kako bi
utvrdili proizvodne pokazatelje pijetlova kokoši hrvatice u pogledu proizvodnje mesa pratili
smo priraste, konzumaciju hrane i vode do starosti pijetlova od 6 mjeseci. Istraživanje je
provedeno na 4 obiteljska gospodarstva, a sa starošću pijetlova od 6 mjeseci isti su zaklani i
klaonički obrađeni. Istraživanje je pokazalo da pijetlovi kokoši hrvatice držani alternativnim
načinom uzgoja sa starošću od 6 mjeseci postižu tjelesnu masu 2,23 kg (jarebičasto-zlatni soj)
i 2,19 kg (crveni soj) uz konzumaciju krmne smjese od 13,68 kg (jarebičasto-zlatni soj) i
11,86 kg (crveni soj) što daje konverziju od 6,24 za jarebičasto-zlatni soj i 5,49 za crveni soj.
Prosječan randman iznosi73,35%, prosječan udio prsa 23,4%, bataka 16,83%, zabataka
18,18% dok je jedino utvrđena značajnija razlika između sojeva u udjelu filea i to 15,33% kod
jarebičasto-zlatnog te 14,31% kod crvenog soja. Na osnovi prikazanih rezultata može se
zaključiti da pijetlovi kokoši hrvatice imaju nešto slabije rezultate u proizvodnji mesa te
spadaju u sporije rastuću perad. Upravo zbog toga prilagođeni su za držanje na otvorenom te
će zbog takvog načina uzgoja uspjeti na tržištu postići višu cijenu. To će još više doći do
izražaja dobivanjem oznake izvornosti za meso čime će ono postati prepoznatljivo na
hrvatskom ali i europskom tržištu te će se proizvodnjom mesa pijetlova kokoši hrvatice moći
ostvariti zadovoljavajući prihod.

Abstract (english)

Alternative posture systems are becoming increasingly accepted in the world due to
the positive correlation of product quality and animal welfare. Such system is best suited to
slow-growing hybrids, as well as to combined poultry breeds such as Hrvatica hen. In order to
determine the production indicators of the roosters of the Hrvatica hen in terms of meat
production, we monitored the weight gain, the consumption of food and water until the age of
roosters were 6 months old. The study was conducted on 4 family farms, and when the
roosters were 6 months old, we slaughtered them and elaborated their corpses. The study
showed that alternatively bred roosters of Hrvatica hen with 6 months of age attain a body
weight of 2.23 kg (patridge-golden strain) and 2.19 kg (red strain) with a feed intake of
13.68 kg (patridge-golden strain) and 1.86 kg (red strain) and the conversion rate of 6.24 for
the patridge-golden strain and 5.59 for the red strain. The average od carcass percentage was
73,35%, while the average proportion of some parts of the carcass were: breast 23.4%,
drumsticks 16,83%, thighs 18,18% while the only different was noticed in proportion of fillets
which was 15,33% in partridge-gold strain and 14,38% in the red strain. Based on results
presented, it can be concluded that the roosters of hrvatica hen have slightly poorer results in
meat production and are among the slower growing poultry. For this reason, they are adapted
for outdoor holding and will be able to achieve higher price due to this type of production.
This will be even more pronounced by gaining the originality mark for meat, which will make
it recognizable in the Croatian and European markets and will be able to generate satisfying
income through the production of rooster meat.
