Abstract

U radu su prikazani rezultati istraživanja morfoloških svojstava sorata mandarine uzgajane na imanju obitelji Batinović iz Metkovića u dolini rijeke Neretve. Istraživane su sljedeće sorte : Wakiyama, Zorica, Chahara, Kawano Wase, Saigon. Opisana su i analizirana sljedeća svojstva: opći izgled, veličina i oblik ploda, površina i debljina kožice, priljubljenost kožice. Najbolji opći izgled imala je sorta Chahara te sorta Zorica, dok je najlošiji imala sorta Wakiyama. Svojstvo karakteristike kožice ploda bile su ocjenjene najvišom ocjenom kod sorte Zorice, a najniže kod sorte Wakiyama. Prosječna masa plodova iznosila je najmanje kod sorte Wakiyama, a najviše kod sorte Saigon. Sorte Chahara i Kawano wase, imale su najvišu ocjenu svojstva okusa ploda, dok je za isto svojstvo najniže ocjenjena sorta Wakiyama. Na temelju rezultata istraživanja udjela mesa, kožice i soka u plodu mandarine utvrđene su značajne razlike između plodova istraživanih sorata. Kako se svake godine izgubi značajni dio plodova koji nisu prikladni za ponudu na tržištu, ali su još uvijek u odličnom stanju da se prerade u sokove i druge prerađevine, u radu je predložena i opisana tehnologija prerade plodova mandarine.

Abstract (english)

This thesis shows the research results of the morphological features of certain cultivars of mandarins grown on the property owned by Batinović family, located in Metković, on the Neretva river valley. The research was based on the following cultivars of mandarins: Wakiyama, Zorica, Chahara, Kawano Wase and Saigon. The following characteristic where analyzed and described: general appearance, size and the shape of the fruit, surface and thichess of the skin, and adhesion of the skin. The analysis of the general appearance puts the cultivars of Chahara and Zorica on the top of the list, and the cultivars Wakiyama on the bottom. While observing the characteristic of the skin, the cultivar Zorica was rated the highest, and the cultivar of Wakiyama the lowest. The average weight of the fruit was the lowest for cultivar Wakiyama, and the highest for cultivar Saigon. The cultivars Chahara and Kawano Wase showed best results while raiting the quality of the taste, while the lowest rated for this characteristic was cultivar Wakiyama. Great differences where noted between the examined varieties while studying the amount of meat, skin and juice of the fruit. Cosidering the fact that a great part of fruit is lost every year due to its unsuitability for the market, but can still be processed into juice and similar products, this thesis suggested and describes the technology that can be used for processing mandarins.
