Abstract

U ovom diplomskom radu obrađena je tema utjecaja uzgojne tehnologije plutajući hidropon i drugih hidroponskih sustava na mineralni sastav i prinos mladih izdanaka u odnosu na uzgoj na komercijalnom supstratu. Mladi izdanci (eng. „microgreens“) su mlade biljke raznovrsnog povrća, aromatičnog bilja, žitarica i samoniklog jestivog bilja uzgojene iz sjemena koje se konzumiraju svježe u fazi potpuno razvijenih kotiledona i nepotpuno razvijenog prvog para pravih listova. Zbog svojeg mineralnog sastava mladi izdanci se smatraju hranom koja pruža veću dobrobit za zdravlje od hrane koja se konzumira kao dio uobičajene prehrane radi podmirivanja osnovnih fizioloških potreba. Pregledom relevantne stručne i znastvene literature utvrđeno je da tehnologija uzgoja utječe na prinos i mineralni sastav mladih izdanaka. Tehnologijom plutajućeg hidropona i drugim hidroponskim sustavima moguće je ostvariti veći prinos mladih izdanaka jednake ili veće količine fosfora, kalija kalcija, željeza i magnezija u odnosu na uzgoj na komercijalnom supstratu.

Abstract (english)

This master’s thesis deals with the topic of the influence of floating hydroponic cultivation system and other hydroponic systems on the mineral composition and yield of microgreens in relation to cultivation on commercial substrates. Microgreens are young plants of various vegetables, aromatic plants, cereals and wild edible plants grown from seeds that are consumed fresh in the phase of fully developed cotyledons and incompletely developed first pair of true leaves. Due to their mineral composition, microgreens are considered a food that provides greater health benefits than food that is consumed as part of a normal diet to meet basic physiological needs. A review of relevant primary and secondary scientific sources showed that the cultivation system has an impact on the yield and mineral composition of microgreens, and that floating hydroponic system and other hydroponic systems can achieve higher yields of young shoots of equal or higher concentrations of phosphorus, potassium, calcium, iron and magnesium in relation to cultivation on commercial substrates.
