Abstract

Dalmacija je područje bogato autohtonim sortama vinove loze, koje i danas čine značajan udio u sortimentu. Cilj istraživanja provedenog na sjemenkama autohtonih crnih dalmatinskih sorata vinove loze je utvrđivanje sastava i količine polifenola male molekulske mase. Polifenolni spojevi su jedni od najznačajnijih čimbenika kakvoće vina budući da utječu na boju vina, senzorne karakteristike poput gorčine i astringencije, oksidacijske reakcije i reakcije s proteinima te promjene vina tijekom dozrijevanja. Također, određeni polifenolni spojevi povoljno utječu na ljudsko zdravlje te imaju dokazana protuupalna, antikancerogena i antioksidativna svojstva što ih čini sve zanimljivijima u raznim industrijama. Sjemenke vinove loze iznimno su bogate polifenolima, posebice flavan-3-olima. Sorte vinove loze međusobno se značajno razlikuju prema polifenolnom sastavu sjemenki, što je i utvrđeno detaljnom statističkom analizom.

Abstract (english)

Dalmatia is a region rich with autochthonous cultivars of Vitis vinfera L., cultivars which represent a significant share in today’s cultivation. The goal of the research conducted on grape seeds of autochthonous red dalmatian varieties of grapevine was defining of composition and quantity of low molecular weight polyphenols. Polyphenolic compounds are one of the most significant factors since they affect wine color, sensory properties such as bitterness and astringency, oxidation reactions and reactions with proteins, and changes during the maturing of wines. Furthermore, some polyphenolic compounds have a positive effect on human health thanks to their anti-inflammatory, anti-cancerogenic and antioxidant properties which makes them more and more interesting in various industries. Grape seeds are rich in polyphenols, especially with flavan-3-ols. Grapevine cultivars are showing statistically significant differences amongst themselves regarding the polyphenolic content, which was proven in statistical analysis.
