Abstract

Ekološko meso sve je traženija namirnica na svjetskom tržištu. Meso s ekološkim certifikatom treba potjecati od ekološki uzgajanih životinja, koje moraju biti zaklane i prerađene u certificiranim klaonicama i objektima. U SAD-u i Australiji propisi navode specifične zahtjeve u prerađivačkoj industriji ekoloških proizvoda. U hrvatskim i EU propisima u ekološkoj proizvodnji mesa pojedine smjernice nisu detaljne. Te regulative se uglavnom odnose na uzgoj životinja, dok je prerada životinjskih proizvoda slabije definirana. Aditivi i pomoćne tvari u preradi mesa razlikuju se u Australiji, SAD-u i Hrvatskoj. Sredstva za čišćenje detaljnije su opisana u drugim državama, dok su u Hrvatskoj aditivi detaljnije opisani. Prednost Hrvatske i EU je postojanje obavezne oznake za ekološke proizvode, dok australski i američki proizvodi imaju više različitih oznaka, ovisno o certifikatoru. Budući da je tržište ekološkog mesa vrlo mlado, očekuje se donošenje detaljnijih regulativa u Hrvatskoj i EU.

Abstract (english)

Market demand for organic meat is increasing worldwide. For meat to acquire organic certificate, organic animals must be slaughtered and processed in certified abattoirs and facilities. In USA and Australia, regulations define specific requirements in organic products processing. In Croatian and EU regulations, some guidelines in organic processing aren't detailed. These regulations mostly define animal production, but animal products processing isn't well defined. Additives and processing aids vary in Australia, USA, and Croatia. Cleansers and sanitizers are more described in other countries, whilst Croatian regulations describe additives better. Advantage of Croatia and EU is obligatory organic label, while Australian and USA products have several different labels, depending on certifier. Organic meat market is still young, so it is expected to adopt more detailed regulations in Croatia and EU in the future.
