Abstract
Mikotoksini, kao sekundarni metaboliti plijesni rodova Aspergillus, Penicillium i Fusarium sveprisutni su i stabilni toksični spojevi. Neki od najčešćih i istraženih te u ovom radu opisani su aflatoksini, patulin, okratoksin A, fumonizini, citrinin, deoksinivalenol, T-2 toksin, trihoteceni i zearalenon. Ukoliko se nađu u prevelikim koncentracijama u životinjskoj krmi ili hrani za ljude izazivaju niz poremećaja i oboljenja koja se nazivaju mikotoksikoze. Postoji niz metoda za njihovo uklanjanje, no ni jedna nije potpuno učinkovita te poskupljuje proces same proizvodnje, stoga je veoma važna prevencija pojave mikotoksina u bilo kojem segmentu proizvodnje.
Abstract (english)
Mycotoxins, as secondary metabolites produced by moulds of genera Aspergillus, Penicillium and Fusarium are omnipresent and stable toxic compounds. Some of the most common and studied, as well as described in this paper are: aflatoxins, patulin, ochratoxin A, fumonisins, citrinin, deoxynivalenol, T-2 toxin, trihotecens and zearalenone. If found in large concentrations in animal fodder or human food, they cause a series of disorders and diseases called mycotoxicosis. Even though a number of methods for their removal are known, none of them is completely effective and increases production costs, therefore, prevention of mycotoxins in any production segment is crucial.
