Abstract

Prehrambeni proizvodi velikim udjelom spadaju u temperaturno osjetljive proizvode koji zahtijevaju poseban temperaturni režim. Kako bi sačuvali kvalitetu i zdravstvenu sigurnost proizvoda potrebno je posvetiti pažnju takvoj vrsti proizvoda. Kako je potražnja za takvom vrstom proizvoda sve veća tako dolaze i sve kompleksniji zahtjevi za proizvođače. U današnjem dinamičnom načinu života zahtjevi potrošača su sve veći i kompleksniji što zahtjeva prilagodbe i modifikacije opskrbnih lanaca kako bi cijeli sustav postao efikasniji uz što manji trošak te konkurentni na tržištu. Da bi se taj cilj lakše postigao razvijene su nove tehnologije koje prate cijeli hladni lanac. U te suvremene tehnologije spadaju sustavi upravljanja kao što je HACCP standard koji uočavaju opasnosti koje prijete proizvodima, sustavi koji prate proizvod u transportu, mobilne hladionice, suvremene metode čuvanja i niz drugih.

Abstract (english)

Food products are for the most part temperature-sensitive products that require a special temperature regime. In order to maintain the quality and health safety of the product, it is necessary to pay special attention to this type of products. As the demand for this type of products is increasing, the requirements for manufacturers are also becoming more and more complex. In today's dynamic lifestyle, consumer demands are becoming more complex, requiring adjustments and changes in supply chains to make the entire system more efficient, cost-effective and competitive in the market. To more easily achieve this goal, new technologies have been developed to monitor the entire cold chain. These modern technologies include management systems such as the HACCP standard that detect hazards to products, systems that monitor products during transport, mobile cold storage, modern storage methods, and a number of others.
