Abstract

Otpad nastaje kao proizvod masovne proizvodnje i potrošnje. Njegovim odlaganjem štetno se djeluje na okoliš i dolazi do njegovog onečišćenja. Više od pola proizvedenog komunalnog otpada u EU čini biorazgradivi otpad koji najčešće nastaje u domaćinstvima, školama, bolnicama i ugostiteljskim objektima. Otpad od hrane koji je bačen, u većem dijelu još je iskoristiv za ljudsku prehranu. U istraživanom ugostiteljskom objektu veganske prehrane utvrđena je količina i sastav otpada od hrane na tanjurima po kategorijama. Dobiveni podatci mogu poslužiti kao temelj za daljnji razvoj strategija smanjenja otpada od hrane.

Abstract (english)

Waste is generated as a product of mass production and consumption. Waste disposal has an adverse effect on the environment and its contamination. More than half of the municipal waste generated in the EU makes biodegradable waste most commonly produced in households, schools, hospitals and hospitality facilities. The food waste that is thrown into most is still usable for human nutrition. The amount and composition of plate waste by categories were determined in the surveyed catering establishment of vegan diet. According to the results obtained, it is possible to adopt and define guidelines and measures for further food waste reduction strategies.
